Unique Dining Experience at the Teakhouse, Svasara Jungle Lodge-Tadoba

The Teakhouse at Svasara is an open-air pavilion with a dining venue surrounded by organic vegetable gardens and a growing indigenous forest. When the setting is as exotic and food delectable – it makes for an extraordinary dining experience.

Every evening, after an exciting jungle safari, guests can sit by the evening bonfire to enjoy hors d'oeuvres under the spectacular starlit sky. Each dinner of the week served at the Teakhouse is a culinary journey through different regions of India. From the spicy local "Varadi" cuisine, to the rich Mughlai cuisine from the North, or the distinctive flavors of the South and East India, the food served is authentic and cooked with the freshest of ingredients.

The journey starts from the North, with the Mughlai and Punjabi dinners - the open-air tandoor aromas of the hot naans and kebabs is quite a delight especially when you get to enjoy it with the cool jungle breeze. Next comes the Eastern "Panch-Phoran" Bengali and Bihari dinners. The traditional rural recipes of Litti-Chokha and chana bachkaas are unique Bihari dishes often being tried for the first time by the guests. Bengali favorites served include Kosha Mangsho, Begun Bhaaja along with the extra sweet Roshogullas.

From east, journey continues to south of India, the delights served from this part of the country include Rasam, the famous Madras Railway Mutton Curry, Egg Roast, Tomato Pappu, Keerai Poondu Masiyal etc. At Svasara, guests also get to savor Anglo-Indian recipes like Bombay potatoes, Baby Corn & Paneer Jhalfrazie, Mutton Stew and Sweet Tomato Chutney.

The grand finale and the most popular dinner at Teakhouse is of course the local Maharashtrian menu. As part of this meal, local cooks prepare dishes such as Zunka Bhakar (gram flour served with sorghum Indian bread), Saoji Chicken, Masala Vangi, delicious condiments such as Thencha (green chili relish), Garlic Fry, Dahi Kachumbar and for dessert, Shira, a semolina pudding.
